With this recipe you can bake the most delicious pacemakers yourself. These cookies consist of a thin layer of cookie dough with a layer of cake on top. There is a large dollop of raspberry jam hidden in the middle of the cake and the cookies are finished with a crispy layer of dark chocolate and lines of white chocolate. Homemade pacemakers are really the tastiest! For the basic recipe you use raspberry jam, but of course you can use any jam you like.

For this pacemaker recipe I collaborated withBaktotaal Bouwhuis, there you will find many baking supplies as well as the ingredients for this recipe. I havethese cake rings of 7 centimetersused. You can also put the cookies in acupcakevormbake, but then they become slightly smaller and slightly different in shape. To roll out the dough for the base nice and evenlythickness bars are very useful. And withthis cutter setyou can cut out the dough perfectly round. In the video below I show you how to bake the cookies! This recipe makes 12-16 pacers.

List of ingredients

  • For the bottom
  • 120 g butter, at room temperature
  • 60 gr white castor sugar
  • zest of ¼ lemon
  • pinch of salt
  • 1 egg yolk
  • 180 grZeeland flower
  • For the cake batter
  • 150 gr white castor sugar
  • 150 g butter, at room temperature
  • zest of ¼ lemon
  • pinch of salt
  • 3 eggs, at room temperature
  • 170 grflower
  • 25 gr cornstarch
  • ½ tlbaking powder
  • Further needed
  • bakspray
  • flour, for the worksheet
  • 100 gr raspberries

Making pacemakers cakes

Place the butter, caster sugar, lemon zest and salt in a bowl and mix together. Mix in the egg yolk. Finally, knead in the Zeeland flour. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.

Preheat the oven to 200°C and line a baking tray with baking paper.

Grease the baking rings and place them on the baking tray. Knead the dough briefly and then roll it out on a lightly floured work surface to a thickness of approximately 3 millimeters. Cut or cut rounds from the dough the size of the baking rings and place them in the rings on the baking tray.

Place all the ingredients for the cake batter in a bowl and mix together. Don't mix the batter for too long, when everything is well mixed you are ready. Place the cake batter in a piping bag with a smooth nozzle of 10-15 millimeters and pipe a circle of the cake batter into the baking rings. Then spoon a teaspoon of raspberry jam into the center of the batter. Bake the pacemakers for 13-17 minutes. Immediately after baking, remove the rings from the cakes and place the pacemakers on a rack to cool.

Temper the dark chocolate. This is possiblethe classic wayofusing the microwave. Dip the cookies in the dark chocolate, so that the top is covered with a thin layer. Then melt the white chocolate, put it in acornetand garnish the pacers with thin lines of white chocolate.

Made this today. Later the white chocolate and then it's finished. Looks very nice. A problem. I still had some problems when demoulding, but with the injection. Do you have any tips to make this easier? I also tried to take them out of the mold immediately, but they were still firmly stuck.

Did you use top and bottom heat or hot air? They bake best with top and bottom heat. Or you can bake them a few minutes shorter next time.

When I let them cool on a rack after baking, I always place them upside down so that they flatten out again! This way they become straight again.
Be sure to put baking paper under the rack because sometimes some jam leaks out

A year ago the baker stopped using pacemakers. My husband thought that was such a shame because it is his favorite pastry. Now I rolled up my sleeves and thought, hey, I'll give Rutger's a try.
